Roasted Red Pepper Dressing

Ingredients

1 sweet red pepper

1 clove garlic, chopped

1/4 cup balsamic vinegar

1/4 tsp. pepper

2 tbsp chopped fresh basil or parsely

1 tbsp olive oil

2 tbsp water

salt to taste

Directions

Cut red pepper in half and remove core and seeds. Arrange halves on a baking sheet, cut sides down. Broil until blackened and blistered. Cool and peel.

In a food processor, puree red pepper and garlic. Blend in vinegar, pepper, basil and oil. Whisk in water. Taste and adjust seasonings, adding salt if necessary.
